Beef Enchiladas

I am a beef eater since I was 4. I have eaten all sorts of beef dishes – locally and internationally. I endure every bits and pieces of it and savors my palette from the time I chew until it is gone.


I just want to share a recipe with you that I know you, your family and friends will enjoy. It is tasty, fun and easy to prepare. It makes a wonderful appetizer and will surely highlight your gatherings. You can make this popular Mexican dish in your own kitchen. Combined with a wonderful chili sauce. This is one dish that will sure spice up your parties.


Ingredients 12 pc flour tortillas, 6” in diameter


Filling
500 gm MONTEREY GROUND BEEF
¼ cup Dari Crème Classic Margarine
1 cup chopped onions
1 tsp chili powder
1 tsp salt
 
1 tsp ground black pepper
 
1 tsp cumin
1 – 200 gm bar grated MAGNOLIA QUICKMELT CHEESE, divided
1 cup sour cream, divided



Sauce
½ cup chopped green bell peppers
2 – 400 mL can chunky tomato sauce
1/2 tsp cumin
½ tsp chili powder
½ tsp ground black pepper
½ tsp salt
1 – 2 tbsp hot sauce


Procedure
Melt margarine in a saucepan. Sauté onions and beef. Cook until beef is no longer red. Add chili powder, salt, pepper and cumin. Continue to cook until beef mixture becomes very dry. Using a slotted spoon, remove beef from pan and transfer to a bowl. Stir in half of grated cheese and half of sour cream. Mix well and set aside.

Using the same pan with its oils, sauté bell peppers. When softened, add tomato sauce and spices. Season with hot sauce. Allow to boil. Remove from heat.


Assembly
Divide beef mixture evenly between 12 pieces of tortilla. Place meat on the center of the tortilla and roll to secure filling. Arrange tortilla rolls side by side on a baking dish. Set aside. Pour tomato sauce over enchiladas and top with the other half of sour cream and grated cheese. Bake in a pre-heated 350 F oven for 25 to 30 minutes. 


Makes 12 servings.

PORK CUTLETS in LEMON SAUCE

Good day!

I would like to share with you an interesting dish with a twist. Have you tried cooking a dish with a squeeze of lemon or anything with has citrus in it? If you haven’t, here’s a simple recipe for you that you willl enjoy.

Ingredients:

½ kilo Monterey Pork Cutlets
½ tsp salt
½ tsp white pepper
4 pcs egg yolks
2 tbsp light soy sauce
2 tbsp rice wine
1 cup cornstarch
Magnolia Palm Olein for deep frying
lemon slices
Lemon Sauce:
½ cup sugar
¾ cup water
1 ½ tbsp cornstarch
1 tsp lemon rind
¼ cup lemon juice
¼ tsp ginger, chopped
¼ tsp garlic, chopped

Procedure:

Season pork cutlets in salt and pepper. Combine yolks, soy sauce, wine and mix very well. Pour over meat pieces and coat evenly. Set aside for at least 30 minutes. Remove meat and dust with cornstarch. Deep fry in a wok with hot oil. Drain fried pork cutlets in paper towels to remove excess oil.
To prepare the sauce, combine all ingredients in a saucepan. Cook over medium heat, stirring constantly until thick. Pour over fried pork cutlets with slices of lemon.
Makes 4-5 servings.

Japanese cafe whips up edible iPhone by Robert Michael Poole

‘iPhones’ sell like hot cakes in Tokushima. And taste better.
iPhone fans, or for that matter anyone fancying an unusual snack, can now get a special treat — an edible version of the Apple device courtesy of Green Gables.

Kumiko Kudo, the 44-year-old owner of the café, has been replicating the iconic smartphone ever since a customer asked her to bake a one-off iPod Touch cookie for a birthday.

Mistaking the ‘device’ for the iPhone, the customer was nevertheless delighted and news spread of the cafe’s speciality via Twitter.

According to Asahi, Kudo was invited to meet Softbank President Masayoshi Son and handed him a cookie. Teleco Softbank distributes the iPhone in Japan and Son is one of Japan’s leading entrepreneurs.

Son had already commented on his Twitter feed how much he wanted an iPhone cookie, and replied “I’m so happy. I cannot possibly eat this.”

Only 20 iPhone cookies are produced per day. The cookies cost ¥2,730 ($33) each.

Kudo says she has attempted to bake an iPad cookie, but “it turned out to be too big, heavy and difficult to make.”

There were no USB ports in her version either.

Creamy Shrimp & Tomato Chowder

Chowder comes from the French word, “chaudieres,” which were the cauldrons used by fishermen to make their rich, fish-based stews. Modern chowders include vegetable-only versions, such as corn chowder and potato chowder, but non-vegetable stews still often have this moniker. Herb, garlic, seasoned tomatoes and whipping cream make a rich base for this main dish recipe, which can be prepared in less than 20 minutes. Serve with warmed bread and butter.
ingredients 
2 stalks celery, chopped (1 cup) 1 medium onion, chopped (1/2 cup) 1 Tbsp. olive oil 2 14.5 oz. cans diced tomatoes with basil, garlic, and oregano, undrained 8 oz. medium peeled cooked shrimp 1/2 cup whipping cream 1/2 cup water Ground Black Pepper Slivered fresh basil Focaccia wedges
directions
In a large saucepan cook celery and onion in hot oil just until tender. Stir in tomatoes; heat through. Add shrimp, whipping cream, and water. Cook over medium heat just until hot. Season to taste with pepper. Ladle chowder into bowls; top with basil Serve with focaccia wedges. Serves 4 (1-1/2-cup servings).

Eating carrots 'makes you more attractive': study

LONDON (AFP) – Eating strongly coloured vegetables and fruit such as carrots and plums makes people more attractive, according to a new British study.
Researchers at St. Andrews and Bristol universities studied the relationship between skin colour and attractiveness, and found people with a yellow skin hue were perceived as particularly healthy and attractive, the Grocer magazine reported.
They also established for the first time that yellow pigments, or carotenoids, from certain fruit and vegetables played a key role in producing yellowness in skin.
As part of the study, 40 volunteers rated 51 Scottish Caucasian faces for healthiness and attractiveness.
The results will be published in the journal Evolution and Human Behaviour in March, the magazine said.
Ian Stephen, one of the scientists involved in the project, said the link between yellowness and carotenoids opened up new strategies for encouraging young people to eat more fruit and vegetables, especially as it took just two months of increased consumption to produce visible results.
He told the Grocer: “Telling people they might have a heart attack in 40 years’ time if they don’t eat more healthily is one thing. What we can do is say, ‘This is what you could look in a couple of months if you increased your fruit and veg intake’.”
