Chicken with Broccoli in Cheesy Sauce

Remembering when I was a kid, our maid used to cook this recipe for lunch or dinner. When I tasted it for the first time, I was like in heaven. Perfect cloudy weather…blue sky…angels singing. Broccoli was well cooked. Same with the chicken and the cheese…oh my! It felt like velvet that runs down thru my palette so easily.


If I were to choose to eat this kind of dish everyday, I would eat it again and again. It is a perfect light viand that is healthy and tasty. Now, I’m sharing it with you for your new recipe needs. Get your kids to eat this kind of dish and I bet you, they won’t let you down.

Ingredients:

4 cup par-boiled broccoli (cut floweret stems sliced ½ inch thick 10 minutes, drain)
½ cup MAGNOLIA GOLD BUTTER
¼ cup chopped white onions
2 cup Magnolia Chicken Station breast fillet, diced ¼ inch cubes
2 tsp paprika
1 tsp rock salt pepper to taste
¼ cup Purefoods Baron All Purpose Flour
2 cup Magnolia Fresh Milk

Sauce: ½ cup Magnolia Cheezee Spread

Procedure:

Blanch broccoli in boiling water (about 10 minutes) and place in ice water to immediately cool down. Drain and set aside.

In a 12 inch deep frying pan, add butter and onions. Cook for 1 minute. Add chicken, paprika, salt, pepper and cook until chicken changes color. Add flour, mix well. Add milk and cook until simmering. Stir in cooked broccoli.


Transfer to an oval serving platter. Spoon Cheezee sauce on top.


Makes 4-5 serving.

Ingredients

3 tbsps Magnolia Nutri Oil Vegetable Oil
½ kilo Monterey Beef Tenderloin, sliced into 1 in cubes
½ tsp Chili flakes
2 tbsps Liquid seasoning
2 tbsps Worcestershire sauce
2 tbsps Magnolia Gold Butter
1 tbsp Garlic, minced
1 pc Finger pepper, sliced

Procedure

Heat oil in a pan. Sauté the beef over high heat for 2 minutes. When done, remove beef from pan and set aside. Using the same pan, add in the chili flakes, liquid seasoning, Worcestershire sauce, butter and garlic.

Add the beef back into the pan and continue to sauté for another 2 minutes.


Transfer to serving dish and garnish with sliced finger pepper.

Ingredients:

1 1/2 kilo MONTEREY PORK SPARERIBS
2Tbsp. lemon juice
2Tbsp. honey
2Tbsp. MAGNOLIA NUTRI-OIL VEGETABLE OIL
1Tbsp. Soy sauce
1tsp. Onion powder
1tsp. Paprika
1tsp. salt
2Tbsp. brown sugar
1/4tsp. dried Oregano
Dash of garlic powder

Procedure:

1. Preheat oven to 350F for 10 minutes.
2. Cut spareribs into serving pieces. Place ribs, bone side down on a wire rack in a shallow roasting pan.
3. Roast covered with foil, for 30 minutes.
4. After 30 minutes, roast the ribs uncovered for another 20 minutes. Set aside.
5. In a glass bowl, combine all the remaining ingredients. Brush some of the glaze on the ribs and roast again for another 15 minutes.
6. Brush some of the glaze on the ribs just before serving. Serve with chilled San Miguel Beer.
7. Serves 8-10

Ingredients:

1 cup PUREFOODS HONEYCURED BACON, cut into 1” pieces
2 tbsp MAGNOLIA GOLD BUTTER
1 tbsp Minced garlic
1 cup Chopped onions
1 kilo MAGNOLIA FRESH CHICKEN, cut into serving pieces (8’s)
1 ½ tsp Salt
Pepper to taste
2/3 cup White wine
1 cup Chicken broth
1 tbsp Tomato paste
½ cup Sliced mushrooms
1/3 cup Sliced green olives

Procedure:

Sauté bacon until golden. Add butter. Sauté garlic and onions. Add chicken pieces and season with salt and pepper. Pan-fry chicken pieces until it turns golden. Turn chicken over to cook it evenly.
Add wine. Simmer until wine is reduced to half. Add broth and tomato paste. Bring to a boil. Skim off excess fat/oils. Lower heat to simmering. Add mushrooms and olives. Simmer for another 5 minutes. Serve warm. Makes 8 servings.

Beef Enchiladas

I am a beef eater since I was 4. I have eaten all sorts of beef dishes – locally and internationally. I endure every bits and pieces of it and savors my palette from the time I chew until it is gone.


I just want to share a recipe with you that I know you, your family and friends will enjoy. It is tasty, fun and easy to prepare. It makes a wonderful appetizer and will surely highlight your gatherings. You can make this popular Mexican dish in your own kitchen. Combined with a wonderful chili sauce. This is one dish that will sure spice up your parties.


Ingredients 12 pc flour tortillas, 6” in diameter


Filling
500 gm MONTEREY GROUND BEEF
¼ cup Dari Crème Classic Margarine
1 cup chopped onions
1 tsp chili powder
1 tsp salt
 
1 tsp ground black pepper
 
1 tsp cumin
1 – 200 gm bar grated MAGNOLIA QUICKMELT CHEESE, divided
1 cup sour cream, divided



Sauce
½ cup chopped green bell peppers
2 – 400 mL can chunky tomato sauce
1/2 tsp cumin
½ tsp chili powder
½ tsp ground black pepper
½ tsp salt
1 – 2 tbsp hot sauce


Procedure
Melt margarine in a saucepan. Sauté onions and beef. Cook until beef is no longer red. Add chili powder, salt, pepper and cumin. Continue to cook until beef mixture becomes very dry. Using a slotted spoon, remove beef from pan and transfer to a bowl. Stir in half of grated cheese and half of sour cream. Mix well and set aside.

Using the same pan with its oils, sauté bell peppers. When softened, add tomato sauce and spices. Season with hot sauce. Allow to boil. Remove from heat.


Assembly
Divide beef mixture evenly between 12 pieces of tortilla. Place meat on the center of the tortilla and roll to secure filling. Arrange tortilla rolls side by side on a baking dish. Set aside. Pour tomato sauce over enchiladas and top with the other half of sour cream and grated cheese. Bake in a pre-heated 350 F oven for 25 to 30 minutes. 


Makes 12 servings.

PORK CUTLETS in LEMON SAUCE

Good day!

I would like to share with you an interesting dish with a twist. Have you tried cooking a dish with a squeeze of lemon or anything with has citrus in it? If you haven’t, here’s a simple recipe for you that you willl enjoy.

Ingredients:

½ kilo Monterey Pork Cutlets
½ tsp salt
½ tsp white pepper
4 pcs egg yolks
2 tbsp light soy sauce
2 tbsp rice wine
1 cup cornstarch
Magnolia Palm Olein for deep frying
lemon slices
Lemon Sauce:
½ cup sugar
¾ cup water
1 ½ tbsp cornstarch
1 tsp lemon rind
¼ cup lemon juice
¼ tsp ginger, chopped
¼ tsp garlic, chopped

Procedure:

Season pork cutlets in salt and pepper. Combine yolks, soy sauce, wine and mix very well. Pour over meat pieces and coat evenly. Set aside for at least 30 minutes. Remove meat and dust with cornstarch. Deep fry in a wok with hot oil. Drain fried pork cutlets in paper towels to remove excess oil.
To prepare the sauce, combine all ingredients in a saucepan. Cook over medium heat, stirring constantly until thick. Pour over fried pork cutlets with slices of lemon.
Makes 4-5 servings.
